Drying is a ubiquitous unit operation found in almost all industrial sectors, ranging from agriculture to pharmaceuticals, and is the most common, diverse, and energy-intensive unit operation. At the same time, it is also one of the least understood operations, particularly at the microscopic level. Drying technology combines transport phenomena and materials science since it involves removing a liquid to produce a solid product and the extent to which the dried product may be modified to meet the required quality criteria or improve the final product. Nowadays, the primary objective of drying is to reduce energy costs and environmental impact while maintaining product quality.
